I was browsing for some new breakfast ideas and came across this recipe for “apple pancake rings.” When I saw that it was basically cut up apples dipped in pancake batter and then cooked like a regular pancake, I thought, “why haven’t I tried that myself?” Then, I thought, “I bet that would be really good if you made it into a sandwich with sausage in the middle, then drizzled it with some maple syrup!” And so here we are.

We typically use Pamela’s Baking and Pancake mix for our regular pancakes, so my ingredients list is different from that on the recipe’s website. Use whatever pancake mix you would normally use, no need to go out and buy anything special. I usually buy Applegate Farms brand breakfast sausage, as it tends to have the least amount of “crap” on the ingredients list. There are different kinds including turkey, pork, and chicken sausages.
-1 apple, peeled and cored, sliced into rings
-1 cup Pamela’s baking & pancake mix
-3/4 cup water
-1 tbsp oil
-4 Applegate Farms chicken apple sausage patties
-maple syrup to drizzle on top
Mix your pancake ingredients in a bowl. Dip apple slices in pancake batter, then place on pre-heated pancake griddle. Flip them when the edges become firm and they are golden brown, repeat on other side. Finally, assemble your sandwiches (sausage in middle of 2 apple pancakes), and drizzle with maple syrup if you wish.
We found these to be very filling. It made 4 sandwiches and we had 1 left over, which was good cold the next morning for breakfast. You could always customize your sandwich with an egg or bacon in the middle as well. We found that you don’t specifically taste the apple, but it does tend to want to slide out of the pancake when you take your big bite!! 😉
